Tiny tomato-based pasta!

It doesn't look too appetizing, but hear me out!

Okay, I'm really bad at measuring so this isn't going to be in exact amounts, but whatever. First I sauteed a little minced onion, bell pepper, and garlic. Then I poured in some pastina and added enough water to cover, as well as a generous pinch of salt. Once it came to a boil, it took about 5 minutes to fully cook. I then drained it, added enough leftover tomato sauce (canned would be even cheaper) to lightly coat the pasta, and then a splash of heavy cream (could sub for milk or half&half). I also seasoned to taste, which was basically just some salt, pepper, garlic powder, italian seasoning, a pinch of sugar, and a couple drops of worcestershire and hot sauce.

Fresh herbs (namely basil, parsley, and thyme) definitely would've kicked it up a notch, but I forgot to add them. I think other chopped vegetables and leftover meat such as hamburger, crumbled sausage, grilled chicken, etc. would also go well in this, as would sprinkled cheese on top. Oh, and if you're gluten intolerant or would just like some added nutrition, you could certainly use quinoa or brown rice in place of the pastina.

All in all, it kinda tastes like fancy ass spaghetti-o's (plus it didn't take much more time or money to make and was slightly more nutritious). I made way more than I could eat, so I ended up saving at least half to be reheated tomorrow. And why am I eating straight out the pan? Because I can, that's why! (and because I need to wash dishes..) So would I make it again? Sure, but I'd make some of the adjustments that I listed above. Anyway, it's nothing spectacular, but I thought it might be worth posting!

no fuss dinner

I've been uninspired lately so I haven't been doing much cooking lately, but last night I figured it was time to get my lazy ass up and throw some dinner together. So I made chicken noodle soup with hand rolled egg noodles.
Haha, motivated enough to cook but not enough to wash dishes, hence me using my niece's lime green bowl. ;) Anyway, it was super easy! (This recipe isn't exact, but you really can't mess it up!) In a medium bowl, I kneaded together 2 1/2 cups of flour, 2 beaten eggs, 1/2 cup of milk, a tablespoon of butter, and a pinch of salt until it all became a smooth ball. (If too dry, add milk. If too sticky, add flour.) I covered the bowl, let it rest for 15 minutes, then rolled the dough out on floured surface and used a pizza cutter to make ~1" long strips. Allow them to dry out a bit before adding to your dish.


Afterwards, I filled a large pot with water and added 1lb of chicken (approx. 4 breasts). While that was boiling, I diced 1 large onion, 2 carrots, 2 stalks of celery (including leaves), 1 potato, and 3-4 small cloves of garlic. When the chicken was done, I removed it from the pot and set it aside. Using the same pot, I poured out the water and added a couple tbs of oil and a couple tbs of butter. I threw in the carrots and celery for 4-5 minutes, then added the onion for another 3-4 minutes. Next, I tossed in the garlic, potato, and a box and a half of Swanson chicken broth. Then I seasoned with chicken bouillon (along with however much water looked right), generous amounts of italian seasoning (basil, parsley, oregano, etc), salt and seasoned salt (but be careful because bouillon is naturally salty and high in sodium), pepper, and a glug of worcestershire. Once I got the taste of the broth right, I shredded the cooked chicken and added it in along with the noodles. The flavors all merry together when the noodles are cooking (around 7-10 minutes) and then you're done! Like I said, easy! The entire pot was gone in about 30 minutes, so it's a great crowd pleaser on a cool night.
